After storage in stock, the chestnuts are subjected to a dry cleaning by the sieves. Subsequently, they are naturally sterilized and subjected to curatura soaking process. As a first step, these are immersed for 45 minutes in hot tubs (50°C) during sterilization, then they are cool down. Then, the product is subjected again to either curatura soaking process in cold water. An operation may last for a few days. At this stage are deleted any microorganisms, thus extending the shelf life of fresh produce. Indeed, the skimmer machine allows the elimination of damaged pieces and then allows the drying process. So the chestnuts are finally ready to be selected, sorted and packaged.
